docs: add Project.md team reference doc

Lands the synthesized 8-section project reference at the repo root so team
members can understand ScoreKeeper without reading the whole codebase.
Cross-checked against live source: in-memory HashMap<UUID,Integer> scores,
five /score-* commands, /score-archive + persistence as unimplemented stubs.
